  1. For best results, use day old rice OR make fresh rice and spread it flat on a tray to rest before cooking.
  2. Mince onion, garlic, other fresh vegetables.
  3. Heat oil in a wok over high heat until smoking. Add rice and toast for 3 minutes, working in portions.
  4. Return rice to wok, create a well in the middle and add oil. Add onion, garlic, and fresh vegetables and saute for 1 minute.
  5. Add soy sauce along the sides of the wok and toss. Add sesame oil and toss. Season with salt and pepper.
  6. Move rice to one side and add oil. Add egg and scramble, mix together.
  7. Add frozen vegetables, toss to heat, and serve immediately.
